I need healthy soup recipes! Please?

Replace healthy with delicious but slightly indulgent, and you will have one of my favorite soups (that I’m actually making tonight):

Southwest Pumpkin Soup

  • 3 cups chicken stock
  • 1 cup whipping cream (any heavy cream would work)
  • 1 15-oz can of pumpkin
  • 3 tbsp brown sugar
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp coriander
  • 1/8 tsp nutmeg
  • Salt & pepper

Bring chicken stock and cream to a boil in a heavy pot. Whisk in pumpkin, brown sugar, cumin, chili powder, coriander and nutmeg. Reduce heat to medium and simmer until soup thickens slightly, about 15 minutes. Season to taste with salt and pepper.

I love this stuff!
